History

Among the legumes , the bean is the most known and used . Before the discovery of America, were known in Europe only small white beans with dark stain , called " eye " , belonging to a genus different from that of all other beans. At the beginning of the sixteenth century were introduced in Europe the new pulses that the Spaniards then imported in all their variety . The bean is a food with high caloric value , rich in vegetable protein and poor in lipids.Since then, the bean has spread thanks to the remarkable adaptation of varieties , the few necessary care , the harvest generally abundant .The first news we have on cannellini bean cultivation in the district of Atina date back to 1811 , De Marco , in his writings, called " bean of the highest quality ," the Cannellini of Atina. The Cirelli , provides some significant information on agricultural production in 1853 stating that they grow two varieties, red and white cannellini , the latter , more valuable , was produced in greater quantities . Local production greatly exceeded the current provincial production now exceed 100 tonnes . This production was used for more than 50% from the peasants and the lower classes , almost 30% were destined for consumption "of the wealthy ," and only 20% was intended for sale does not constitute a marginal income of rural households .The cannellini bean , for at least two centuries , was one of the main foods of the local residents and farmers in particular. The only family Visocchi of Atina in 1908 had in their stores the equivalent of about 40 q.li , whereas the production was divided in equal parts with the settlers means that their production stood at least around 80 quintalsA special mention this enlightened family which for over a century has been a focal point for the local people . Landowners to thousands of acres , politicians of the first order, Achilles Visocchi was Minister of Agriculture from January 1919 to March 1920 .Among the members of this family , particularly important for the development of agriculture was the agronomist Pasquale Visocchi , born in 1817 and died in 1908 , this at a time when agriculture was very backward, skinny productions were obtained from work in the fields and hunger was the real social problem , set itself the goal of improving agricultural production.Experimental fields planted and after 13 years of hard work managed to perfect the technique of defining a list of species green manure plus fertilizer , in 1850 began the cure mildew and improved the vines local planting in 1860 of the most prestigious French vine varieties in its specialized vineyards .Since these varieties brothers Visocchi obtained high quality wines as the " Sammichele " Bordeaux blend of inspiration , also known abroad ; the company's brand Visocchi carried the words: " The genius of the wine is in the grape ," to emphasize the importance given to cultivated varieties .The establishment Brothers Wine Visocchi was producing well in 1928 4,600 q.li of grapes produced in its own vineyards. As for the beans , as particularly important are the methods of irrigation, Pasquale Visocchi , saw the construction of numerous canals that served to also use the waters of the River Melfa , not used before as they are considered too cold . He showed that it was possible to use these waters for delicate crops such as cannellini beans , making sure to irrigate in the cool hours before dawn .This family was then able to improve the quality and quantity of crops failing , particularly in the wine sector, to market in Italy and abroad particularly fine wines .For many vicissitudes , that the family, after the last war and has suffered financial setbacks with the death in 1959 of William Visocchi , dissolved all the heritage not only economic but also a guide for the country inspired by high moral values .But there was something handed down to this earth in which they were grown , with meticulous attention , grapes and beans , and love for the land. After years of confusion, with great expertise but also with great difficulty, is the wine division of cannellini beans that are enjoying a revival avviandosi to reach the quantity and quality of the past.

PROSPECTS
For the enhancement of cannellini bean are making a series of actions intended to strengthen the image that this product has changed over time .These acts of exploitation are therefore the primary objective of identifying, institutionally , the agro-food products , thus becoming fundamental elements of the specific recognition of these by the end consumer. The Cooperative Atina.doc , after drawing up the specification, being submitted in December 2001 for approval of the LAG XIV and XV Mountain Communities are working together relevant institutions in order to obtain the Protected Designation of Origin (PDO ) for the cannellini bean of Atina.
- The names are public instruments to enhance the quality characteristics of agricultural products intended for human consumption , from certain geographical areas. The purpose of names is to protect the name , consolidated over time , typical products of certain areas so that it can not be used to similar products with similar characteristics but obtained in other places. The name , the boundaries of the geographical area of production, the quality and the production methods of a designation shall be governed by public authority and responsibility to the farmers through their organizations , the task of activating the procedures aimed at the recognition of some typical products , or of those productions that belong broadly to the territory in which such entities operate .At Community level, the designations have been governed by Council Regulation EEC n.2081/92 that includes:
1 ) The achievement of production volumes sufficient to meet a demand that we assume tends to increase .
2 ) The advertising of the product.
3 ) The identification of appropriate sales channels.
Regarding the first point , obtaining sufficient production volumes , it must be emphasized that accurate market surveys have revealed significant opportunities. The reality of the Comino Valley Farm is extremely fragmented , given the presence of a multitude of small family-run farms , which generate modest production volumes and that is why they turn to a local market , having neither the skills nor resources to promote the cannellini bean on a national and trans- national .The cooperative " of Mollarino " and ATINA.DOC , absolutely do not consider themselves in competition with these small farms as are proposed disclosure of the cannellini bean Atina on the national and international markets through the establishment of consortia which , in the next future , will be proposed as a subject leader. This will create the necessary conditions to develop virtuous economies of scale that will allow the reduction of operating costs , a higher added value and a more diverse distribution of wealth. This body will then become the promoter of the acquired know-how and with respect to the production phase than to that of sales. These phases are clearly inclusive of the various production techniques, supply of factors of production , finance and marketing .From the past few years , more than the production achieved through the cultivation of land the members of cooperatives and lands that have been leased , which would otherwise have remained unused , were involved other farmers who have sold part of their product. This project, which saw the excellent results achieved , will satisfy a growing demand involving other farmers , buying the necessary amount from the many small farms in the area carrying out, at the same time , a function of rigorous quantitative production thereby placing so as aggregator and solving the problems of extreme fragmentation of the local agricultural reality .The interweaving of historical and climatic conditions combined with high skills of the local population for the most part still devoted to agriculture, in spite of national trends and European , are the main elements of the uniqueness of cannellini bean of Atina.
We have also organized and / or participated in events, fairs and exhibitions on agricultural products aimed at enhancing the beans in the district of Atina. In particular, have been realized in Villa Latina , in August 03.02.2001 , events and conferences on cannellini bean , connected to a festival of ethnic music that has seen these artists from Italy and abroad .In December 2001, then was organized a major event on the typical products in Cassino , in collaboration with the Municipality , the Provincial Administration of Frosinone, the Department regional agricultural policies of the Lazio Region , the LAG XIV and XV and the Mountain Communities ' Hotel Institute of Cassino. As part of the event have been proposed eno-gastronomic itineraries .With the Department for Agriculture of Lazio Region, the Provincial Administration of Frosinone is a conference was organized May 2, 2002 at the Provincial Exhibition " The cannellini bean in the district of Atina - a new economic reality " in the presence of officials of the ' ARSIAL and the Chamber of CommerceThe rediscovery of typicality can trigger a virtuous cycle for the benefit of agriculture , commerce , crafts , a tourism related to the environment , emergencies, monuments and archaeological sites in the area. In this way you can restore that relationship of complementarity that restores a role to the historic Valley of Comino.Productive relationships are being built with the Slow Food heavily involved in the rediscovery of typical dishes and products .This is a decisive step towards the affirmation of a product that until a few years ago was the staple food of the peasants of the district of Atina and now we would like to be tasted even in the most famous restaurants .
