For several centuries, the cannellini beans of Atina has represented the main food of the inhabitants of the territory. Even today, the main techniques used have not changed:
- the soil before sowing is not fertilized, even with organic fertilizer;
- the harvest is done manually, the seedlings are weeded out, together in bunches and dried by natural ventilation;
- the final selection, before packaging, is done manually.
